This is a contraction joining the pronoun 'she' with a shortened form of the verb 'is' or 'has'. The pronoun 'she' itself emerged in early Middle English, around the 1100s, apparently developing from the Old English feminine demonstrative 'seo' (meaning 'that one' or 'the'), which gradually replaced the older feminine pronoun 'heo'. The little 's at the end is the trimmed remnant of 'is' or 'has', with the apostrophe standing in for the dropped letters, a convention that became settled in English printing during the 1600s and 1700s. That apostrophe is the whole spelling trap: it marks the missing letters, so it can never be omitted, and 'she's' must not be confused with any apostrophe-free spelling. Because English has no possessive 'shes', the apostrophe form is the only correct written shape here.
