The word grows from 'garden', which English took from the Old North French 'gardin', a regional form of Old French 'jardin', meaning an enclosed piece of ground. That in turn traces back to a Frankish (Germanic) root 'gardo' meaning an enclosure or yard, a relative of the native English 'yard' and the German 'Garten'. The shared idea was always a fenced or walled space set apart for growing plants. The verb 'to garden' and its activity noun 'gardening' developed in English by adding the familiar '-ing' ending, well established by the 1500s and 1600s as cultivating land became a settled domestic pastime. The spelling keeps the single 'd' and the 'en' of 'garden' intact, so the only thing to remember is that nothing doubles when '-ing' is added.
